For a lot of the more complex pieces I some times use a midi track to help lay down all the notes. I then go through the entire thing making any note adjustments necessary, then I replace the default midi instruments with EastWest libraries and adjust again as necessary. The result, what you hear there.

A lot of times midi tracks have already velocity, tempo, and other automation added, so that makes it easier at times also, but again, that may also need adjusting depending on the instruments you use.

Some times tracks I want to make don't have a midi track, or the available midi tracks are pretty poor, so like my Autobots piece from Transformers, that was done entirely from scratch and took me a long time to finish.

It's usually the percussion from available midi tracks which need entirely rewriting.
